Quark
Quark is about as simple as cheese gets: milk is left to coagulate overnight into a curd, drained a little, and then whipped smooth. The overnight set is what gives it a clean acidity rather than the flat blandness of a fast-acidified product. Because it starts from milk rather than cream it is naturally leaner than most fresh cheeses, and slightly more tart, which makes it useful in baking where a cream-based cheese would be heavy. It is an everyday staple across Germany, Austria and northern Europe, but travels poorly as an export โ American shelves stock almost entirely domestic production. Cottage cheese is the closest local equivalent, though commercial cottage cheese is often thickened with gums and stabilisers, especially in reduced-fat form.
