Halloumi is the great outlier among fresh cheeses: where the rest of the category spoils within days, it is unusually robust. Sold vacuum-packed, it tolerates freezing and thawing without noticeable damage, which is close to unique. Sheep and goat milk together form the traditional base, and the PDO specification now requires them to make up more than half the mixture — a requirement being phased in gradually, since decades of cow-milk production left the Cypriot sheep and goat flock too small to meet it at once. The defining property is that it will not melt: a slab keeps its form over a grill or in a hot pan, browning and tightening rather than flowing, and it needs no coating or batter to do so. Some versions carry flecks of mint, a survival of the practice of wrapping blocks in herbs to help them keep.

History & Origins

A Cypriot tradition of long standing, originally a sheep and goat milk cheese held in brine. Disagreement among milk producers over the permitted proportion of cow milk delayed EU protection for years; the designation was finally registered in 2021, with the milk-ratio requirement deferred through a transition period.

Cultural Significance

The national cheese of Cyprus and its best-known food export. Commonly eaten grilled, and traditionally served alongside watermelon in summer.

PDO — What the Designation Requires

Registered as an EU PDO by Implementing Regulation (EU) 2021/591 on 12 April 2021, as "Χαλλούμι (Halloumi) / Hellim", with protection in force from 1 October 2021. Only cheese produced in Cyprus to the registered specification may use the name. The specification builds on the Cypriot standard CYS 94 of 1985 and requires sheep or goat milk to exceed half the mixture; because the national flock cannot yet supply that volume, a transitional derogation phases the ratio upward in annual steps rather than applying the threshold immediately. Sources published before 2021 state that Halloumi is unprotected — they predate the registration.
