EU PDO/French AOC since 1968. Made from Tarine and Abondance cow milk in Savoie Alps. Three varieties: Beaufort, Beaufort d'été (summer), Beaufort d'alpage (mountain pasture). Minimum aging: 5 months (often 8-12 months).
